Borneo's cuisine has been strongly influenced by the varied ethnic and cultural backgrounds of local people. Rich variety of traditional food is created by many tribes and indigenous groups. Smoky chicken satay is served at Malay night markets and Indonesian eateries offer fire hot sambal. Sarawak Laksa is a spicy noodle soup special to Borneo. Manok Pansoh is a dish from the Ibans of Sarawak. Chicken, mushrooms, lemongrass and tapioca leaves are stuffed into a bamboo tube and cooked over an open fire. The island is also famous for the production of Chinese bird’s nest soup.
Crab, prawns and fish are popular, particularly on the coast. Roti flat bread is not native to Borneo, but it's very popular. Rice is a staple but in the far north, corn and tapioca are preferred. Take the chance to try local fruits like rambutan, jackfruit, salak, durian and wild mango. Tuak is a locally brewed rice wine, popular in small villages.
